With only 46 calories in 1 cup, it is a quick, easy and delicious snack! Not only is it a good source of fiber, watermelon has also been found to decrease the link of prostate cancer, combat the formation of free radicals that are known to cause cancer, aid in digestion and improve regularity due to the high lycopene content, and help relieve muscle soreness as well as improve recovery time after exercising.
There are many ways to serve watermelon, but one of my favorite watermelon recipes is the Chobani Watermelon and Feta Salad
Ingredients
- 2 C Whole Milk Plain Chobani Greek Yogurt
- 1 C watermelon small dice
- ¼ C feta cheese, crumbled
- 4 tsp jalapeño
- 2 tbsp extra virgin olive oil
- 2 tbsp fresh basil leaves, choppedt
- 2 tsp lime juice
- ½ tsp sea salt
- ¼ tsp fresh ground pepper
Recipe:
Step 1
Scoop ½ C of yogurt into each of 4 bowls.
Step 2
Top each bowl of yogurt with 3 tbsp watermelon, 1 tbsp feta cheese, 1 tsp jalapeno, ½ tbsp olive
oil, ½ tbsp basil and ½ tsp lime juice. Season with salt and pepper.
Step 3
Serve with pita chips.
